Strawberry Pesto!

June 20, 2011

Let me take you down, cause I’m going to….

In the summer afternoons spent at our lake house growing up, my family and I would take the boat out to a small island we called ‘blueberry island’ with packed lunches and cartons ready to be filled with the plumpest, most delicious berries. When we returned home, boasting pounds of blueberries and purple stained fingers, my Grandmother would be there ready to bake up the most delicious warm blueberry pies for a post-picking feast. I miss those simple summer days and especially those pies.

But strawberry picking on a warm summer day, with two best friends and mountain views spanning for hundreds of miles all around you makes that void a little smaller. And the strawberry basil pesto I made with those freshly picked berries? It might not measure up to that blueberry pie, but it definitely was a great post- picking treat.

Strawberry Basil Pesto

This pesto came together wonderfully, and the fruity flavor really popped through! Basil and strawberry are two token summer flavors, and they complimented each other perfectly. I’ve already added it into scrambled eggs, had it on top of chicken and mixed it into yogurt… it’s very versatile.

  • 5 medium strawberries
  • 1/2 cup basil leaves
  • 1/2 cup freshly grated parmesan cheese
  • 2 Tbsp Olive Oil
  • 1/4 cup walnuts
  • Salt to taste

Add all ingredients to a food processor and blend until well mixed while adding the olive oil. Because the strawberries have a high water content, this pesto doesn’t need nearly as much oil as traditional pestos. You may even find you can omit it all together. I barely measured any ingredients so add more or less depending on your own taste buds.

Do you have fond memories of berry picking as a child? What kinds of fresh treats would you and your family usually make with the fruit?
